Ingredients
- 4 boneless, skinless chicken breasts or thighs

Instructions
- Prepare the Chicken: Season the chicken breasts or thighs with salt and pepper on both sides.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set it aside.

- Finish the Dish: Return the cooked chicken to the skillet, spooning the sauce over the top. Simmer for 3–4 more minutes until the chicken is fully coated and the sauce thickens slightly.
- Garnish and Serve: Sprinkle with fresh thyme and parsley before serving. Serve the chicken with rice, mashed potatoes, or roasted vegetables to soak up the creamy mustard sauce.

- If using bone-in chicken, adjust the cooking time to 35–40 minutes and cover the skillet to help cook the chicken thoroughly.
