A light and elegant French chicken dish featuring tender chicken thighs simmered with fresh tarragon, assorted vegetables, and a creamy herb sauce, perfect for a comforting yet sophisticated dinner.
Ingredients
Chicken
- 6 chicken thighs or breasts
- 1 tbsp olive oil
- Salt and pepper, to taste
Vegetables & Aromatics
- 1 onion, sliced
- 2 carrots, sliced
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
Liquids & Herbs
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tbsp fresh tarragon, chopped
Instructions
- Season the chicken. Pat the chicken thighs or breasts dry, then season both sides generously with salt and pepper for optimal flavor.
- Brown the chicken. Heat olive oil in a large skillet over medium heat. Add the chicken and sear on both sides until a golden-brown crust forms, about 4-5 minutes per side. Remove chicken and set aside.
- Sauté the vegetables. In the same skillet, add sliced onion, carrots, and mushrooms. Cook, stirring occasionally, until they soften and start to caramelize, about 6-8 minutes.
- Add garlic. Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.
- Simmer the chicken. Return the browned chicken to the skillet and pour in the chicken broth. Cover the skillet and let everything simmer gently for 25-30 minutes until the chicken is fully cooked and tender.
- Finish the sauce. Remove the lid, stir in the heavy cream and fresh tarragon. Simmer uncovered for another 5 minutes until the sauce thickens slightly and the flavors meld.
- Serve warm. Plate the chicken with vegetables and spoon the creamy tarragon sauce over the top. Great accompanied by rice, potatoes, or steamed green beans.
Notes
- Use fresh tarragon for the best herbaceous flavor; dried tarragon is not recommended.
- This dish pairs nicely with rice, mashed potatoes, or green beans for a complete meal.
