Description

Ingredients

Chicken

  • 6 chicken thighs or breasts
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Vegetables & Aromatics

  • 1 onion, sliced
  • 2 carrots, sliced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced

Liquids & Herbs

  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp fresh tarragon, chopped


Instructions

  1. Season the chicken. Pat the chicken thighs or breasts dry, then season both sides generously with salt and pepper for optimal flavor.
  2. Brown the chicken. Heat olive oil in a large skillet over medium heat. Add the chicken and sear on both sides until a golden-brown crust forms, about 4-5 minutes per side. Remove chicken and set aside.
  3. Sauté the vegetables. In the same skillet, add sliced onion, carrots, and mushrooms. Cook, stirring occasionally, until they soften and start to caramelize, about 6-8 minutes.
  4. Add garlic. Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.
  5. Simmer the chicken. Return the browned chicken to the skillet and pour in the chicken broth. Cover the skillet and let everything simmer gently for 25-30 minutes until the chicken is fully cooked and tender.
  6. Finish the sauce. Remove the lid, stir in the heavy cream and fresh tarragon. Simmer uncovered for another 5 minutes until the sauce thickens slightly and the flavors meld.
  7. Serve warm. Plate the chicken with vegetables and spoon the creamy tarragon sauce over the top. Great accompanied by rice, potatoes, or steamed green beans.

Notes

  • Use fresh tarragon for the best herbaceous flavor; dried tarragon is not recommended.
  • This dish pairs nicely with rice, mashed potatoes, or green beans for a complete meal.
