- 4 cups spring mix or romaine
- 1 apple, diced
- ½ cup dried cranberries
- ⅓ cup walnuts or pecans
- ¼ cup crumbled feta cheese
Cranberry Vinaigrette
- 3 tbsp olive oil
- 2 tbsp cranberry juice or puree
- 1 tbsp red wine vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Prepare the salad base: In a large bowl, combine 4 cups of spring mix or romaine lettuce with 1 diced apple, ½ cup dried cranberries, ⅓ cup walnuts or pecans, and ¼ cup crumbled feta cheese. Gently toss to mix the ingredients evenly.
- Make the cranberry vinaigrette: In a small bowl, whisk together 3 tablespoons olive oil, 2 tablespoons cranberry juice or puree, 1 tablespoon red wine vinegar, 1 teaspoon honey, and a pinch of salt and pepper until the dressing is well blended and emulsified.
- Dress the salad: Drizzle the cranberry vinaigrette over the salad mixture. Toss lightly to coat all the ingredients evenly without bruising the greens.
- Serve immediately: Serve the salad fresh to enjoy the crispness of the greens and the vibrant flavors of the vinaigrette.
Notes
- Fresh cranberry puree gives the best flavor and brightness to the vinaigrette.
- For a heartier holiday meal salad, add roasted turkey slices.
- You can substitute walnuts with pecans or your preferred nuts for different texture and taste.
- Adjust the sweetness of the vinaigrette by adding more or less honey according to preference.
