Instructions
- Cook the meat: Heat a skillet over medium heat and add the ground beef or chicken. Cook until browned and fully cooked, breaking it up with a spoon as it cooks.
- Add seasoning: Stir in the taco seasoning packet along with a splash of water to help distribute the spices evenly. Cook for another 2 minutes to blend the flavors.
- Add beans and corn: Mix in the black beans and corn to the meat mixture and cook for an additional 3 to 5 minutes until heated through.
- Assemble the bowl: In each serving bowl, layer the cooked rice first, then top with the seasoned meat, beans, and corn mixture. Add diced tomatoes and sprinkle shredded cheese on top.
- Add toppings and serve: Garnish with fresh shredded lettuce, salsa, and a dollop of sour cream. Serve the bowls warm for a delicious taco-inspired meal.
