Ingredients

Chicken & Marinade

  • 2 lb chicken breast, cubed
  • 1/2 cup sugar-free tomato sauce
  • 1 tbsp lemon juice
  • 2 tbsp tikka masala seasoning or garam masala
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • Salt and pepper to taste

Vegetables & Aromatics

  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger

Dairy & Liquids

  • 1 cup canned coconut milk


Instructions

  1. Combine Ingredients: Add the cubed chicken breast, finely chopped onion, minced garlic, grated ginger, sugar-free tomato sauce, lemon juice, tikka masala seasoning, paprika, turmeric, salt, and pepper into the slow cooker. Mix well to ensure the chicken is evenly coated with the spices and sauce.
  2. Start Slow Cooking: Set the slow cooker to low heat and cook the mixture for 6 hours, or alternatively on high heat for 3 to 4 hours. This slow cooking process allows the chicken to become tender and absorb all the rich flavors of the spices and sauce.
  3. Add Coconut Milk: About 30 minutes before the cooking time ends, stir in the canned coconut milk to the slow cooker. This enriches the sauce with a creamy texture and balances the spices with a mild sweetness.
  4. Serve: Once cooking is complete, give everything a good stir. Serve the chicken tikka masala hot, ideally with a side of cauliflower rice or low carb naan bread to keep the meal low carb.
