Ingredients
Main Ingredients
- 2 tbsp butter
- 1 small onion, diced
- 2 cups chopped broccoli florets
- 2 cups chicken or vegetable broth
- 1 cup milk or cream
- 1 ½ cups shredded cheddar cheese
- 2 tbsp flour
- Salt and pepper to taste
Instructions
- Sauté Onion: Melt the butter in a saucepan over medium heat. Add the diced onion and sauté for 2–3 minutes until it becomes soft and translucent, enhancing the flavor base of the soup.
- Add Flour: Sprinkle the flour over the onions and cook, stirring constantly, for about 1 minute. This step helps to create a roux that will thicken the soup.
- Add Liquids: Gradually pour in the chicken or vegetable broth followed by the milk or cream, whisking continuously to ensure a smooth mixture without lumps.
- Simmer Broccoli: Add the chopped broccoli florets to the pot. Bring the soup to a gentle simmer and cook for 10–12 minutes, until the broccoli is tender.
- Melt Cheese & Season: Stir in the shredded cheddar cheese until fully melted and incorporated. Season the soup with salt and pepper to taste.
Notes
- For a smoother texture, use an immersion blender to puree the soup partially or completely.
- Adding a pinch of nutmeg can give the soup a subtle depth and warmth of flavor.
