Ingredients
Meat and Oils
- 1 lb ground beef or stew meat
- 1 tbsp olive oil
Vegetables
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (fresh or frozen)
- 2 potatoes, cubed
Liquids & Seasonings
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 tsp Italian seasoning
- Salt and pepper, to taste
Instructions
- Brown the Beef: In a large pot, heat the olive oil over medium heat. Add the beef and cook until browned, breaking it apart as it cooks for even browning.
- Sauté Aromatics: Add the chopped onion and minced garlic to the pot with the beef. Cook for 2 to 3 minutes until the onion is translucent and the garlic is fragrant.
- Add Broth and Vegetables: Pour in the beef broth and diced tomatoes with their juice. Then add the mixed vegetables and cubed potatoes, stirring to combine all ingredients.
- Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer gently for 30 minutes until the vegetables are tender and flavors meld.
- Season and Serve: Taste the soup and add salt, pepper, and Italian seasoning as desired. Serve hot, enjoying the rich and hearty flavors.
