Description
A tender and juicy beef tenderloin roast paired with a bold and creamy horseradish sauce, perfect for special occasions or elegant dinners.
Ingredients
Beef Tenderloin Roast
- 1 beef tenderloin (about 1–1.5 kg)
- 2 tbsp olive oil
- Salt and pepper to taste
Creamy Horseradish Sauce
- 1/2 cup sour cream
- 2 tbsp prepared horseradish
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 220°C (428°F) to ensure a hot environment for roasting the beef tenderloin evenly and developing a flavorful crust.
- Prepare the Beef: Rub the beef tenderloin all over with olive oil, then season generously with salt and pepper, enhancing its natural flavors.
- Roast the Beef: Place the beef in a roasting pan and cook in the preheated oven for 25–35 minutes, or until it reaches your desired level of doneness. Use a meat thermometer for accuracy—around 57°C (135°F) for medium rare.
- Rest the Meat: Remove the roast from the oven and let it rest for 10 minutes. This resting period allows the juices to redistribute, keeping the meat moist and tender when sliced.
- Make the Horseradish Sauce: In a small bowl, combine sour cream, prepared horseradish, Dijon mustard, lemon juice, salt, and pepper. Mix until smooth and creamy. Adjust horseradish quantity to your preferred heat level.
- Serve: Slice the rested beef tenderloin and serve with the creamy horseradish sauce on the side for a delicious, elegant meal.
Notes
- Use a meat thermometer to check for precise doneness and avoid overcooking.
- Letting the meat rest after roasting keeps it juicy and tender.
- Adjust the amount of horseradish in the sauce according to your preferred heat intensity.
