Description

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/2 cup cold water
  • Vegetable oil, for frying
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce (adjust for spice preference)
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sesame oil (optional)
  • 1/2 tablespoon chopped green onions (for garnish)
  • Sesame seeds (for garnish, optional)

Instructions

  1. In a medium-sized bowl, whisk together flour, cornstarch, garlic powder, paprika, salt, and pepper. In another bowl, whisk the egg and cold water together until smooth. Add the egg mixture to the dry ingredients and stir until combined.
  2. Dip each shrimp into the batter, ensuring it’s evenly coated. Tap off excess batter.
  3. In a deep skillet, heat 2-3 inches of vegetable oil over medium-high heat. Drop in a small amount of batter to test the oil; if it sizzles immediately, it’s ready for frying.
  4. Fry the shrimp in batches for 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to remove the shrimp and place them on a paper towel-lined plate.
  5. In a small bowl, mix together the mayonnaise, sriracha, honey, rice vinegar, garlic powder, and sesame oil until smooth. Taste and adjust the spice level as desired.
  6. Place the fried shrimp in a bowl and toss gently with the Dynamite sauce to coat.
  7. Transfer the shrimp to a serving platter and garnish with chopped green onions and sesame seeds. Serve immediately with lime wedges or a side of rice for a complete meal.

Notes

  • For extra crispiness, use panko breadcrumbs mixed with the flour in the batter.
