Ingredients

Instructions
- Sauté Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion and sliced carrots, sautéing them for about 5 minutes or until the onions become translucent and the carrots start to soften.
- Add Main Ingredients: Stir in the chopped cabbage, diced potatoes, diced tomatoes (with their juice), and vegetable broth. Season with turmeric, paprika, salt, and pepper to taste, mixing everything well to combine flavors.
- Simmer Soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 25 to 30 minutes. Cook until all vegetables, especially potatoes and cabbage, are tender and cooked through.
- Finish and Serve: Remove the soup from heat and stir in the juice of half a lemon to add brightness and enhance the flavors before serving.
