Ingredients

Vegetables

  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 cups chopped cabbage
  • 2 medium potatoes, diced

Liquids & Canned Goods

  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes

Seasonings & Oils

  • 1 Tbsp olive oil
  • 1 tsp turmeric
  • ½ tsp paprika
  • Salt & pepper, to taste
  • Juice of ½ lemon


Instructions

  1. Sauté Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion and sliced carrots, sautéing them for about 5 minutes or until the onions become translucent and the carrots start to soften.
  2. Add Main Ingredients: Stir in the chopped cabbage, diced potatoes, diced tomatoes (with their juice), and vegetable broth. Season with turmeric, paprika, salt, and pepper to taste, mixing everything well to combine flavors.
  3. Simmer Soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 25 to 30 minutes. Cook until all vegetables, especially potatoes and cabbage, are tender and cooked through.
  4. Finish and Serve: Remove the soup from heat and stir in the juice of half a lemon to add brightness and enhance the flavors before serving.
