Description

Sweet Potato Rounds with Goat Cheese are a colorful and flavorful appetizer, perfect for holidays, parties, or anytime you want a healthy bite-sized snack. Roasted sweet potato slices are topped with creamy goat cheese, honey, and herbs for a delicious sweet-and-savory combo.

Ingredients

Sweet Potato Rounds:

  • 2 large sweet potatoes, sliced into ½-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Toppings:

  • 4 oz goat cheese, softened
  • 2 tablespoons honey (plus extra for drizzling)
  • 2 tablespoons chopped pecans (optional)
  • 1 tablespoon fresh thyme leaves (or rosemary)

Instructions

  1. Preheat oven to 400°F (200°C). Arrange sweet potato slices on a baking sheet lined with parchment. Brush with olive oil on both sides, then sprinkle with salt and pepper.
  2. Roast for 20–25 minutes, flipping halfway through, until tender and lightly browned.
  3. Remove from oven and let cool slightly.
  4. Spread a small amount of goat cheese on each round.
  5. Drizzle with honey and sprinkle with pecans and thyme.
  6. Serve warm or at room temperature.

Notes

  • For extra flavor, whip the goat cheese with a splash of cream or milk before spreading.
  • Can be made ahead: roast the sweet potatoes and assemble with cheese just before serving.
  • Try topping with dried cranberries or pomegranate seeds for a festive touch.
