- 6 cups water or broth

- 100 g chicken, sliced
- 100 g shrimp, peeled and deveined
- 100 g fish fillet, cut into pieces

- 1 tsp soy sauce
- 1 tsp sesame oil

Instructions
- Prepare the rice: Rinse the rice thoroughly under cold water until the water runs clear to remove excess starch, then add it to a pot with 6 cups of water or broth. Bring to a boil, then reduce to a simmer and cook gently until the rice softens and the mixture becomes creamy, about 30 minutes.
- Add ginger and chicken: Once the rice has softened, add the sliced ginger and chicken pieces to the pot. Continue to simmer, stirring occasionally, until the chicken is mostly cooked through, approximately 10-15 minutes.
- Incorporate seafood: Add the peeled shrimp and fish fillet pieces to the congee. Cook for an additional 5-7 minutes, or until the seafood is just cooked and tender, being careful not to overcook to maintain its delicate texture.
- Season the congee: Stir in the soy sauce and sesame oil, and season with salt and white pepper to your taste. Mix well and allow the congee to simmer briefly for the flavors to meld, around 2-3 minutes.
- Garnish and serve: Remove the ginger slices if desired, ladle the hot congee into bowls, garnish with chopped green onions, and serve immediately while warm and comforting.
Notes
- For more variety, add scallops or squid along with the other seafood.
- Avoid overcooking the seafood to keep it tender and maintain its delicate flavor.
