Description
This Delicious Crockpot French Onion Meatloaf recipe features a juicy, flavorful meatloaf slow-cooked to perfection with caramelized onions and savory beef broth. The result is a tender, melt-in-your-mouth main dish that’s easy to prepare and perfect for a comforting family meal.
Ingredients
Meatloaf
- 2 lb ground beef
- 1 packet (1 oz) onion soup mix
- ½ cup breadcrumbs
- 2 eggs
- ¼ cup milk
Additional Ingredients
- 1 large onion, thinly sliced
- 1 cup beef broth
- 1 cup shredded Swiss or mozzarella cheese
Instructions
- Prepare Meatloaf Mixture: In a large bowl, combine the ground beef, onion soup mix, breadcrumbs, eggs, and milk. Mix thoroughly until all ingredients are evenly incorporated. Shape the mixture into a loaf shape by hand.
- Layer Onions and Meatloaf: Place the thinly sliced onions evenly on the bottom of the crockpot. Then, carefully set the shaped meatloaf on top of the onions to ensure flavors meld during cooking.
- Add Beef Broth: Pour 1 cup of beef broth around the meatloaf inside the crockpot. This will keep the meatloaf moist and add a rich oniony flavor as it cooks.
- Cook the Meatloaf: Cover the crockpot with the lid and cook on Low heat for 6 to 7 hours, or on High heat for 3 to 4 hours, until the meatloaf is fully cooked and tender.
- Add Cheese Topping: Once the meatloaf is cooked through, sprinkle 1 cup of shredded Swiss or mozzarella cheese over the top. Cover the crockpot again and allow the cheese to melt for a few minutes before serving.
Notes
- For a richer flavor, consider searing the onions in a pan until caramelized before adding them to the crockpot.
- This meatloaf goes perfectly with sides like mashed potatoes or green beans for a classic comfort food meal.
