Description

This Delicious Crockpot French Onion Meatloaf recipe features a juicy, flavorful meatloaf slow-cooked to perfection with caramelized onions and savory beef broth. The result is a tender, melt-in-your-mouth main dish that’s easy to prepare and perfect for a comforting family meal.

Ingredients

Meatloaf

  • 2 lb ground beef
  • 1 packet (1 oz) onion soup mix
  • ½ cup breadcrumbs
  • 2 eggs
  • ¼ cup milk

Additional Ingredients

  • 1 large onion, thinly sliced
  • 1 cup beef broth
  • 1 cup shredded Swiss or mozzarella cheese

Instructions

  1. Prepare Meatloaf Mixture: In a large bowl, combine the ground beef, onion soup mix, breadcrumbs, eggs, and milk. Mix thoroughly until all ingredients are evenly incorporated. Shape the mixture into a loaf shape by hand.
  2. Layer Onions and Meatloaf: Place the thinly sliced onions evenly on the bottom of the crockpot. Then, carefully set the shaped meatloaf on top of the onions to ensure flavors meld during cooking.
  3. Add Beef Broth: Pour 1 cup of beef broth around the meatloaf inside the crockpot. This will keep the meatloaf moist and add a rich oniony flavor as it cooks.
  4. Cook the Meatloaf: Cover the crockpot with the lid and cook on Low heat for 6 to 7 hours, or on High heat for 3 to 4 hours, until the meatloaf is fully cooked and tender.
  5. Add Cheese Topping: Once the meatloaf is cooked through, sprinkle 1 cup of shredded Swiss or mozzarella cheese over the top. Cover the crockpot again and allow the cheese to melt for a few minutes before serving.

Notes

  • For a richer flavor, consider searing the onions in a pan until caramelized before adding them to the crockpot.
  • This meatloaf goes perfectly with sides like mashed potatoes or green beans for a classic comfort food meal.
