Description

Ingredients

For the crust:

  • 1 ½ cups chocolate cookie crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted

For the filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 8 oz semisweet chocolate, melted and slightly cooled
  • ½ cup sour cream
  • 1 tsp vanilla extract

For the topping:

  • 1 can (21 oz) cherry pie filling
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Chocolate shavings, for garnish

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil.
  2. In a bowl, mix cookie crumbs, sugar, and melted butter. Press mixture firmly into the bottom of the pan. Bake crust for 10 minutes. Set aside.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing just until blended. Stir in melted chocolate, sour cream, and vanilla.
  4. Pour filling over crust. Place the pan in a roasting pan and fill halfway with hot water for a water bath.
  5. Bake for 55–65 minutes, until the center is almost set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
  6. Remove, cool completely, then refrigerate for at least 4 hours or overnight.
  7. Before serving, whip heavy cream with powdered sugar and vanilla until soft peaks form.
  8. Top cheesecake with cherry pie filling, whipped cream swirls, and chocolate shavings.

Notes

  • For extra decadence, drizzle melted chocolate over the top before serving.
  • Fresh cherries can replace canned filling when in season.
  • Store leftovers covered in the refrigerator for up to 4 days.
