Ingredients
Main Ingredients
- 1½ pounds boneless, skinless chicken breasts
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup frozen or canned corn
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon oregano
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 4 cups chicken broth
- 1 block (8 oz) cream cheese, cubed
- ½ cup sour cream
- Juice of 1 lime
Optional Toppings
- Shredded Monterey Jack or pepper jack cheese
- Fresh cilantro
- Sliced jalapeños
- Tortilla strips
Instructions
- Prepare the Base: Place chicken breasts into the crockpot, then add diced onion, minced garlic, drained beans, diced green chilies, corn, cumin, chili powder, smoked paprika, oregano, salt, and black pepper.
- Add Broth and Cook: Pour in the chicken broth and gently stir to combine. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, allowing flavors to meld and chicken to cook through.
- Shred the Chicken: Remove the cooked chicken breasts from the crockpot and shred them using two forks into bite-sized pieces.
- Combine Ingredients: Return the shredded chicken back to the crockpot. Add cubed cream cheese and sour cream to the mixture.
- Final Cooking and Creamy Finish: Cover and cook on LOW for an additional 20–30 minutes, stirring occasionally until the cream cheese is melted and the chili is creamy and well incorporated.
- Add Lime Juice and Serve: Stir in the fresh lime juice to brighten the flavors. Serve the chili hot with your choice of optional toppings such as shredded cheese, fresh cilantro, sliced jalapeños, or tortilla strips.
Notes
- For thicker chili, mash some of the beans before serving to achieve your desired consistency.
- Use chicken thighs instead of breasts for a richer, more flavorful chili.
- Adjust the heat level by adding sliced jalapeños or cayenne pepper according to your preference.
- Chili will thicken further as it rests, so consider this when adjusting consistency.
- This dish freezes well for up to 3 months, making it ideal for meal prep or leftovers.
