Description
This Crockpot French Onion Meatloaf is an elevated take on the classic comfort food, slow-cooked to tender perfection and topped with rich melted Swiss cheese and sweet caramelized onions, offering a flavorful and fuss-free meal.
Ingredients
Meatloaf
- 2 lb ground beef
- 1 packet onion soup mix (about 1 oz)
- ½ cup breadcrumbs
- 2 eggs
Topping and Cooking Liquid
- 1 large onion, sliced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 cup shredded Swiss cheese
Instructions
- Prepare the meat mixture: In a large bowl, combine the ground beef, onion soup mix, breadcrumbs, and eggs. Mix well until all ingredients are evenly incorporated to form the meatloaf base.
- Layer the onions in the crockpot: Spread the sliced onions evenly in the bottom of the crockpot to create a flavorful bed for the meatloaf.
- Shape and place the meatloaf: Form the meat mixture into a loaf shape and carefully place it on top of the layer of onions in the crockpot.
- Add broth and Worcestershire sauce: Pour the beef broth mixed with Worcestershire sauce over and around the meatloaf, which will keep it moist and infuse flavor during cooking.
- Slow cook the meatloaf: Cover and cook on Low for 6 hours or on High for 3 hours, until the meatloaf is thoroughly cooked and tender.
- Add the Swiss cheese topping: Sprinkle the shredded Swiss cheese evenly over the meatloaf, cover again, and cook for an additional 10 minutes, or until the cheese is melted and gooey.
- Serve: Carefully remove the meatloaf from the crockpot and slice. Serve warm with the caramelized onions from the bottom and your favorite sides, such as toasted baguette slices.
Notes
- Toasted baguette slices make a perfect accompaniment to soak up the flavorful juices and onions.
- For a juicier meatloaf texture, try using a mix of half ground beef and half ground pork.
