Description

This Crockpot French Onion Meatloaf is an elevated take on the classic comfort food, slow-cooked to tender perfection and topped with rich melted Swiss cheese and sweet caramelized onions, offering a flavorful and fuss-free meal.

Ingredients

Meatloaf

  • 2 lb ground beef
  • 1 packet onion soup mix (about 1 oz)
  • ½ cup breadcrumbs
  • 2 eggs

Topping and Cooking Liquid

  • 1 large onion, sliced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup shredded Swiss cheese

Instructions

  1. Prepare the meat mixture: In a large bowl, combine the ground beef, onion soup mix, breadcrumbs, and eggs. Mix well until all ingredients are evenly incorporated to form the meatloaf base.
  2. Layer the onions in the crockpot: Spread the sliced onions evenly in the bottom of the crockpot to create a flavorful bed for the meatloaf.
  3. Shape and place the meatloaf: Form the meat mixture into a loaf shape and carefully place it on top of the layer of onions in the crockpot.
  4. Add broth and Worcestershire sauce: Pour the beef broth mixed with Worcestershire sauce over and around the meatloaf, which will keep it moist and infuse flavor during cooking.
  5. Slow cook the meatloaf: Cover and cook on Low for 6 hours or on High for 3 hours, until the meatloaf is thoroughly cooked and tender.
  6. Add the Swiss cheese topping: Sprinkle the shredded Swiss cheese evenly over the meatloaf, cover again, and cook for an additional 10 minutes, or until the cheese is melted and gooey.
  7. Serve: Carefully remove the meatloaf from the crockpot and slice. Serve warm with the caramelized onions from the bottom and your favorite sides, such as toasted baguette slices.

Notes

  • Toasted baguette slices make a perfect accompaniment to soak up the flavorful juices and onions.
  • For a juicier meatloaf texture, try using a mix of half ground beef and half ground pork.
