Description

This Crockpot Chicken Piccata is a delicious and easy slow cooker adaptation of the classic Italian dish, featuring tender chicken infused with lemon, garlic, and capers. Perfect for a flavorful weeknight dinner!


Ingredients

Chicken:

  • 4 boneless, skinless chicken breasts

Dredging Mixture:

  • ½ cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper

Sauce:

  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup fresh lemon juice (about 2 lemons)
  • ¼ cup capers, drained and rinsed
  • 2 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Optional: lemon slices, for serving

Instructions

  1. Season chicken: Season chicken with salt and pepper, then lightly dredge in flour.
  2. Sear chicken: Heat olive oil in a skillet, sear chicken until golden brown, then transfer to slow cooker.
  3. Prepare sauce: Sauté garlic, deglaze with broth and lemon juice, pour over chicken in slow cooker.
  4. Cook: Add capers, cook on LOW for 4–5 hours or HIGH for 2–3 hours.
  5. Finish: Stir in butter before serving, garnish with parsley and lemon slices.
  6. Serve: Enjoy with pasta, rice, or mashed potatoes.

Notes

  • For extra flavor, use bone-in chicken thighs instead of breasts.
  • Thicken sauce with a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) if desired.
