Ingredients
Chicken:
- 4 boneless, skinless chicken breasts
Dredging Mixture:
- ½ cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
Sauce:
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- ½ cup fresh lemon juice (about 2 lemons)
- ¼ cup capers, drained and rinsed
- 2 tbsp unsalted butter
- 2 tbsp fresh parsley, chopped (for garnish)
- Optional: lemon slices, for serving
Instructions
- Season chicken: Season chicken with salt and pepper, then lightly dredge in flour.
- Sear chicken: Heat olive oil in a skillet, sear chicken until golden brown, then transfer to slow cooker.
- Prepare sauce: Sauté garlic, deglaze with broth and lemon juice, pour over chicken in slow cooker.
- Cook: Add capers, cook on LOW for 4–5 hours or HIGH for 2–3 hours.
- Finish: Stir in butter before serving, garnish with parsley and lemon slices.
- Serve: Enjoy with pasta, rice, or mashed potatoes.
Notes
- For extra flavor, use bone-in chicken thighs instead of breasts.
- Thicken sauce with a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) if desired.
