Description
Tender chicken breasts slow-cooked in a rich, deeply flavorful onion broth and finished with melted Gruyère cheese, creating a comforting French onion soup-inspired dinner that’s effortless to make.
Ingredients
Chicken and Broth
- 4 boneless, skinless chicken breasts
- 1 cup beef or chicken broth
- 1 packet onion soup mix (about 1 oz)
Vegetables and Cheese
- 2 cups sliced onions
- 2 tbsp butter
- 1 cup shredded Gruyère or Swiss cheese
Instructions
- Prepare the onions and butter: Place the sliced onions and butter in the bottom of the crockpot, spreading evenly to create a flavorful base.
- Add and season the chicken: Lay the boneless, skinless chicken breasts on top of the onions, then sprinkle the onion soup mix evenly over the chicken for seasoning.
- Add broth and start slow cooking: Pour the beef or chicken broth over the chicken and onions. Cover and cook on Low for 5 to 6 hours, or on High for about 3 hours, until the chicken is thoroughly cooked and tender.
- Add cheese and finish cooking: Sprinkle shredded Gruyère or Swiss cheese over the cooked chicken. Cover and cook for an additional 10 minutes or until the cheese has melted beautifully, creating a rich, gooey topping.
Notes
- Add a splash of white wine to the broth for more depth and complexity in flavor.
- Serve this comforting dish over rice, creamy mashed potatoes, or with toasted crusty bread to soak up the delicious onion broth.
- For a richer taste, consider using beef broth rather than chicken broth.
- Gruyère cheese melts best, but Swiss cheese is a great substitute if preferred.
