Ingredients
Meat and Base
- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
Seasoning and Vegetables
- 1 packet taco seasoning
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
Liquids and Finishing
- 3 cups chicken broth
- 4 ounces cream cheese
- Salt to taste
Instructions
- Brown the Meat: Heat olive oil in a large pot over medium heat. Add the ground beef or turkey and cook, stirring occasionally, until the meat is browned and cooked through.
- Sauté Aromatics: Add the diced onion and minced garlic to the browned meat. Cook for about 3-5 minutes until the onions are softened and fragrant.
- Add Seasoning and Ingredients: Stir in the taco seasoning, black beans, corn, diced tomatoes, and chicken broth. Mix everything well to combine the flavors.
- Simmer the Soup: Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for 15 minutes. This allows the flavors to meld and the soup to slightly thicken.
- Add Cream Cheese: Stir in the cream cheese until it’s fully melted and the soup is creamy and smooth. Adjust salt to taste.
Notes
- Adjust the thickness of the soup by adding more chicken broth if desired.
- Serve topped with tortilla chips or shredded cheese for added texture and flavor.
