Description

A rich and flavorful creamy taco soup featuring classic taco seasoning, ground meat, black beans, corn, and diced tomatoes, all simmered together with a smooth finish from cream cheese. This hearty and comforting Mexican-inspired soup is perfect for an easy weeknight dinner.

Ingredients

Meat and Base

  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced

Seasoning and Vegetables

  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes

Liquids and Finishing

  • 3 cups chicken broth
  • 4 ounces cream cheese
  • Salt to taste

Instructions

  1. Brown the Meat: Heat olive oil in a large pot over medium heat. Add the ground beef or turkey and cook, stirring occasionally, until the meat is browned and cooked through.
  2. Sauté Aromatics: Add the diced onion and minced garlic to the browned meat. Cook for about 3-5 minutes until the onions are softened and fragrant.
  3. Add Seasoning and Ingredients: Stir in the taco seasoning, black beans, corn, diced tomatoes, and chicken broth. Mix everything well to combine the flavors.
  4. Simmer the Soup: Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for 15 minutes. This allows the flavors to meld and the soup to slightly thicken.
  5. Add Cream Cheese: Stir in the cream cheese until it’s fully melted and the soup is creamy and smooth. Adjust salt to taste.

Notes

  • Adjust the thickness of the soup by adding more chicken broth if desired.
  • Serve topped with tortilla chips or shredded cheese for added texture and flavor.
