Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 cups cooked jasmine or basmati rice
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium heat.
- Cook the chicken breasts for 5-7 minutes on each side until golden brown and fully cooked. Remove from the pan and set aside.
- In the same pan, add the diced onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.
- Pour in chicken broth, scraping the bottom of the pan to lift up any browned bits.
- Stir in the heavy cream, Dijon mustard, paprika, garlic powder, and onion powder. Let it simmer for 5 minutes to thicken slightly.
- Stir in the shredded cheese until melted. If the sauce is too thick, add a bit more chicken broth to reach your desired consistency.
- Return the chicken to the pan, coating it in the creamy sauce. Simmer on low for 3-4 minutes.
- Spoon a serving of cooked rice onto each plate and top with the creamy chicken.
- Sprinkle freshly chopped parsley over the top before serving.
