Main Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- ½ teaspoon dried thyme
- 4 cups vegetable broth
- ½ cup quinoa, rinsed
- 1 cup milk or unsweetened almond milk
- Salt and pepper, to taste
Optional Ingredients
- Shredded cheese
- Fresh herbs (such as parsley or thyme)
Instructions
- Heat the oil: Warm 1 tablespoon of olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
- Sauté vegetables: Add the diced onion and carrot to the pot and cook for about 5 minutes until they become soft and fragrant.
- Add garlic and thyme: Stir in the minced garlic and ½ teaspoon dried thyme, cooking for about 30 seconds to release their flavors without burning.
- Add broth and quinoa: Pour in 4 cups of vegetable broth and the rinsed ½ cup quinoa, stirring together to combine all ingredients.
- Simmer: Bring the mixture to a boil, then reduce heat and simmer gently for 20 to 25 minutes until the quinoa is tender and cooked through.
- Add milk and heat through: Stir in 1 cup of milk or unsweetened almond milk, warming the soup without boiling to maintain creaminess.
- Season and serve: Season the soup with salt and pepper to taste. Optionally top with shredded cheese or fresh herbs before serving warm.
Notes
- For extra creaminess, blend 1 to 2 cups of the soup using an immersion blender or traditional blender.
- Add fresh spinach or peas during the simmering step to boost the vegetable content.
- Use unsweetened almond milk for a dairy-free version.
