Ingredients

Broth:
- 4 cups low-sodium beef broth
- 28 ounce canned diced tomatoes
- 1 tablespoon Italian seasoning
Additional Ingredients:
- 1 pound cheese tortellini
- 2 cups diced zucchini
- 1 cup heavy whipping cream
Instructions
- Saute : Heat olive oil in Instant Pot, add sausage, onions, and garlic. Cook until sausage is browned and onions are translucent.
- Deglaze: Add 1/2 cup beef broth to deglaze pot, scraping up any browned bits. Stir in remaining broth, tomatoes, and Italian seasoning.
- Pressure Cook: Lock lid, set to high pressure for 15 minutes. Quick release, then add zucchini and tortellini. Pressure cook for another 2 minutes.
- Finish: Stir in cream, adjust seasoning, and serve hot.
