This creamy Instant Pot Tortellini Soup with Sausage is a delectable combination of tender cheese tortellini, savory Italian sausage, and a rich, creamy broth. Ingredients

1 tablespoon olive oil

  • 1/2 pound Italian sausage, casing removed
  • 1 1/2 cups diced onions
  • 4 cloves garlic, minced

Broth:

  • 4 cups low-sodium beef broth
  • 28 ounce canned diced tomatoes
  • 1 tablespoon Italian seasoning

Additional Ingredients:

  • 1 pound cheese tortellini
  • 2 cups diced zucchini
  • 1 cup heavy whipping cream

Instructions

  1. Saute : Heat olive oil in Instant Pot, add sausage, onions, and garlic. Cook until sausage is browned and onions are translucent.
  2. Deglaze: Add 1/2 cup beef broth to deglaze pot, scraping up any browned bits. Stir in remaining broth, tomatoes, and Italian seasoning.
  3. Pressure Cook: Lock lid, set to high pressure for 15 minutes. Quick release, then add zucchini and tortellini. Pressure cook for another 2 minutes.
  4. Finish: Stir in cream, adjust seasoning, and serve hot.
