Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 1/2 teaspoon dried basil (optional)
  • 1/2 teaspoon dried thyme (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, until golden brown and cooked through. Remove the chicken and set it aside.
  3. In the same skillet, add minced garlic and cook for 1-2 minutes, until fragrant.
  4. Add heavy cream and chicken broth to the skillet. Stir to combine and simmer for 3-5 minutes until the sauce begins to thicken.
  5. Stir in the grated Parmesan cheese, then add the chopped spinach, basil, thyme, and red pepper flakes (if using). Stir until the spinach wilts and the sauce is creamy and smooth.
  6. Return the cooked chicken breasts to the skillet and spoon sauce over them. Let simmer for another 3-4 minutes to allow the chicken to absorb the flavors.
  7. Garnish with chopped parsley and serve over pasta, rice, or with crusty bread.
