Ingredients
- 3–4 boneless, skinless chicken breasts
- 1 cup shredded Jack cheese
- 2 tablespoons olive oil
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- Chopped green onions and paprika for topping
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt and pepper on both sides.
- Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant.
- Pour in the chicken broth and bring it to a simmer. Let it reduce for 2-3 minutes.
- Stir in the sour cream and cook for another 2 minutes until the sauce thickens slightly.
- Return the chicken breasts to the skillet and spoon some sauce over them. Sprinkle the shredded Jack cheese on top.
- Cover the skillet and cook for another 3-5 minutes, or until the cheese has melted and the chicken is heated through.
- Garnish with chopped green onions and a sprinkle of paprika before serving.
