Instructions
- Boil Potatoes: Boil the peeled and diced potatoes in the chicken or vegetable broth until they become tender but do not drain the liquid; this allows the broth and potato starch to combine for a richer soup base.
- Sauté Onions: In a separate pot, melt the butter over medium heat and add the chopped onions. Sauté them until they are soft and translucent, releasing their natural sweetness.
- Create Roux: Stir in the flour to the sautéed onions and cook for about 1 minute. This step ensures the flour loses its raw taste and begins to thicken the soup when the liquids are added.
- Add Liquids: Slowly whisk in the milk followed by the potato and broth mixture. Combining the liquids gradually prevents lumps and creates a smooth texture.
- Simmer Soup: Allow the soup to simmer gently until it thickens and becomes creamy. Stir occasionally to prevent sticking to the bottom of the pot.
