Ingredients
Dry Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
Wet Ingredients:
- ¾ cup fresh orange juice
- 1 tbsp orange zest
- ¼ cup vegetable oil (or melted butter)
- 1 large egg
Mix-ins:
- 1 ½ cups fresh or frozen cranberries (halved if large)
- ½ cup chopped walnuts
Instructions
- Preheat oven: to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Prepare dry ingredients: In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine wet ingredients: In another bowl, whisk orange juice, zest, oil, and egg until combined.
- Mix wet and dry: Gently fold wet mixture into dry ingredients until just combined.
- Add mix-ins: Stir in cranberries and walnuts.
- Bake: Pour batter into prepared loaf pan and smooth the top. Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Cool in pan 10 minutes before transferring to a wire rack to cool completely.

- Use fresh or frozen cranberries (no need to thaw frozen).
- Add a citrus glaze (powdered sugar + orange juice) for extra flavor.
