Description

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

For the Cranberry Balsamic Glaze:

  • 1 cup fresh or frozen cranberries
  • ½ cup balsamic vinegar
  • ¼ cup honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tsp fresh rosemary or thyme, chopped
  • ½ cup chicken broth
  • 2 tbsp butter

Instructions

  1. Season the Chicken: Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden brown; remove and set aside.
  2. Make the Cranberry Balsamic Glaze: In the same skillet, add cranberries, balsamic vinegar, honey, garlic, and broth. Simmer 8–10 minutes until cranberries burst and sauce reduces.
  3. Finish the Dish: Stir in butter and rosemary. Return chicken to skillet, coating with sauce. Cook 5–7 minutes more until chicken reaches 165°F (74°C) and glaze thickens.
  4. Serve: Serve chicken topped with extra cranberry balsamic sauce.
