Description

These Cottage Cheese Pumpkin Streusel Muffins are moist, fluffy, and infused with creamy pumpkin flavor complemented by a crunchy cinnamon streusel topping. Made with almond flour and cottage cheese, they offer a low-carb, gluten-free, and vegetarian-friendly treat perfect for breakfast or a snack.

Ingredients

Main Ingredients

  • 1 cup pumpkin purée
  • ½ cup cottage cheese
  • 1 cup almond flour
  • ¼ cup sugar or sweetener
  • 1 tsp baking powder
  • ½ tsp cinnamon

Streusel Topping

  • 2 tbsp butter
  • 2 tbsp almond flour
  • 1 tbsp brown sweetener

Instructions

  1. Preheat oven: Preheat your oven to 350 °F (175 °C) to ensure it’s at the correct temperature for baking the muffins evenly.
  2. Prepare batter: In a blender or mixing bowl, combine the pumpkin purée, cottage cheese, almond flour, sugar or sweetener, baking powder, and cinnamon. Blend or mix until the ingredients are fully incorporated, creating a smooth batter.
  3. Fill muffin cups: Spoon the batter evenly into a greased or lined muffin tin, filling each cup about three-quarters full to allow room for rising.
  4. Make streusel topping: In a small bowl, mix the butter, almond flour, and brown sweetener until crumbly. Sprinkle this streusel mixture generously over the top of each muffin.
  5. Bake muffins: Place the muffin tin in the preheated oven and bake for 20 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
  6. Cool and serve: Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack. Serve warm or at room temperature.

Notes

  • Add chocolate chips to the batter for a delicious dessert twist.
  • Ensure the cottage cheese is well blended for a smooth batter texture.
  • Store muffins in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
