- 1 tbsp brown sweetener
Instructions
- Preheat oven: Preheat your oven to 350 °F (175 °C) to ensure it’s at the correct temperature for baking the muffins evenly.
- Prepare batter: In a blender or mixing bowl, combine the pumpkin purée, cottage cheese, almond flour, sugar or sweetener, baking powder, and cinnamon. Blend or mix until the ingredients are fully incorporated, creating a smooth batter.
- Fill muffin cups: Spoon the batter evenly into a greased or lined muffin tin, filling each cup about three-quarters full to allow room for rising.
- Make streusel topping: In a small bowl, mix the butter, almond flour, and brown sweetener until crumbly. Sprinkle this streusel mixture generously over the top of each muffin.
- Bake muffins: Place the muffin tin in the preheated oven and bake for 20 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
