Description
Corned Beef Hash is a savory, hearty, and comforting dish that combines crispy potatoes, tender corned beef, and caramelized onions. Perfect for breakfast, brunch, or even dinner, it’s a flavorful and satisfying meal that can be customized with additional toppings like eggs or fresh herbs.
Ingredients
- 2 tablespoons olive oil (or butter)
- 1 medium onion, finely chopped
- 2 cups cooked corned beef, chopped (leftover corned beef works perfectly)
- 2 medium potatoes, peeled and diced (or use pre-cooked or leftover potatoes)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley or chives (optional, for garnish)
- Eggs (optional, for serving)
Instructions
- In a pot of boiling salted water, cook the diced potatoes for 5-7 minutes, or until just tender. Drain well and set aside (or use leftover potatoes for a quicker version).
- In a large skillet, heat the olive oil (or butter) over medium heat. Add the chopped onions and cook, stirring occasionally, for 4-5 minutes, until softened and beginning to caramelize.
- Add the cooked (or leftover) potatoes to the skillet. Season with garlic powder, paprika, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until the potatoes are golden brown and crispy on the edges.
- Once the potatoes are crispy, add the chopped corned beef to the skillet. Stir everything together and cook for an additional 5-7 minutes, allowing the corned beef to heat through and get slightly crispy.
- Remove from heat and garnish with fresh parsley or chives. If desired, top the hash with a poached or fried egg for extra richness.
- Serve immediately and enjoy this savory, satisfying dish!
Notes
- For extra flavor, you can add diced bell peppers, spinach, or mushrooms to the skillet along with the onions.
- If you want a spicier version, add a diced jalapeño or red pepper flakes while cooking the potatoes.
- Leftover veggies like carrots or peas can be added to the hash to make it a more substantial meal.
- For a cheesy twist, sprinkle shredded cheese over the hash just before serving.
