Ingredients
Whole Chicken:
- 1 whole chicken, about 4–5 lbs
- 2 lemons, halved
- 4 cloves of garlic, minced
Herb Rub:
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Prep the Chicken: Preheat your oven to 375°F. Pat the chicken dry with paper towels, then season the cavity with salt and pepper. Stuff the cavity with lemon halves and garlic.
- Make the Herb Rub: In a small bowl, combine olive oil, rosemary, thyme, salt, and pepper. Rub the mixture all over the chicken, ensuring it’s evenly coated.
- Roast the Chicken: Place the chicken in a roasting pan and roast for about 1.5 to 2 hours, or until the internal temperature reaches 165°F. Let it rest for 10 minutes before carving.
Notes
- For crispier skin, you can start roasting the chicken at a higher temperature (around 425°F) for the first 20 minutes, then reduce the heat to 375°F.
- Feel free to customize the herb rub with your favorite herbs like sage or parsley.
