- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 cup potatoes, diced
- 1 cup green beans, chopped
- 1 cup corn (fresh or frozen)
Liquids & Canned Goods
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
Oils & Seasonings
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and black pepper, to taste
- Optional: fresh parsley, for garnish
Instructions
- Heat the oil: Heat olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
- Sauté base vegetables: Add diced onion, sliced carrots, and sliced celery to the pot. Cook for 5–7 minutes until the vegetables soften and become aromatic.
- Add garlic: Stir in minced garlic and cook for about 30 seconds until fragrant, being careful not to let it burn.
- Add main ingredients: Pour in canned diced tomatoes, vegetable broth, diced potatoes, chopped green beans, and corn into the pot to create the soup base.
- Season the soup: Sprinkle in dried thyme, dried basil, salt, and black pepper to taste. Stir to evenly distribute the seasonings.
- Simmer: Bring the soup to a boil, then reduce the heat and allow it to simmer gently for 20–25 minutes, or until all the vegetables are tender and cooked through.
- Final seasoning: Taste the soup and adjust the seasoning with more salt or pepper as needed to suit your preference.
- Serve and garnish: Ladle the hot soup into bowls and optionally garnish with fresh parsley for added color and flavor.
