Description

A warm, comforting classic vegetable soup made with simple, wholesome ingredients. This easy one-pot recipe is perfect for a healthy lunch or cozy dinner any day of the week.

Ingredients

Vegetables

  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 cup potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup corn (fresh or frozen)

Liquids & Canned Goods

  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth

Oils & Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • Optional: fresh parsley, for garnish

Instructions

  1. Heat the oil: Heat olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Sauté base vegetables: Add diced onion, sliced carrots, and sliced celery to the pot. Cook for 5–7 minutes until the vegetables soften and become aromatic.
  3. Add garlic: Stir in minced garlic and cook for about 30 seconds until fragrant, being careful not to let it burn.
  4. Add main ingredients: Pour in canned diced tomatoes, vegetable broth, diced potatoes, chopped green beans, and corn into the pot to create the soup base.
  5. Season the soup: Sprinkle in dried thyme, dried basil, salt, and black pepper to taste. Stir to evenly distribute the seasonings.
  6. Simmer: Bring the soup to a boil, then reduce the heat and allow it to simmer gently for 20–25 minutes, or until all the vegetables are tender and cooked through.
  7. Final seasoning: Taste the soup and adjust the seasoning with more salt or pepper as needed to suit your preference.
  8. Serve and garnish: Ladle the hot soup into bowls and optionally garnish with fresh parsley for added color and flavor.
