Description

A juicy, perfectly seasoned prime rib roast featuring a crispy herb crust and tender, melt-in-your-mouth center — an elegant holiday or special occasion centerpiece that delivers classic American flavors.

Ingredients

Prime Rib Roast

  • 56 lb prime rib roast
  • 2 tbsp olive oil
  • 2 tbsp garlic, minced
  • 1 tbsp rosemary, chopped
  • 1 tbsp thyme, chopped
  • 1 tbsp salt
  • 1 tsp black pepper

Instructions

  1. Bring to Room Temperature: Remove the prime rib roast from the refrigerator and let it sit uncovered for 1–2 hours to reach room temperature, ensuring more even cooking throughout.
  2. Preheat Oven: Set the oven to 450°F (230°C) to start with a high heat that will create a flavorful crust on the roast.
  3. Prepare the Roast: Rub the entire surface of the roast evenly with olive oil, then apply the minced garlic, rosemary, thyme, salt, and black pepper, making sure the seasonings adhere well to the meat.
  4. Initial High-Heat Roast: Place the roast on a roasting rack in a pan and cook it at 450°F for 15 minutes to sear the exterior and lock in juices.
  5. Lower Heat and Continue Roasting: Reduce the oven temperature to 325°F (160°C) and continue roasting the meat for 1½ to 2 hours, or until the internal temperature reaches 125°F for medium-rare doneness.
  6. Rest the Roast: Remove the roast from the oven and tent it loosely with foil, letting it rest for 20 minutes to redistribute the juices, ensuring a moist and tender final product.
  7. Slice and Serve: Carve the roast against the grain into thick slices and serve immediately, optionally using pan drippings to make au jus gravy.

Notes

  • Always rest the roast before carving to retain the juices and achieve perfect tenderness.
  • Use the pan drippings collected during roasting to prepare a flavorful au jus gravy to accompany the meat.
