Instructions

  1. Prepare the rice base: Rinse the rice thoroughly under cold water to remove excess starch. In a large pot, combine the rinsed rice with 6 cups of water or chicken broth and bring to a gentle boil.   2. Add mushrooms and ginger: Once the porridge reaches the desired smooth consistency, add in the sliced shiitake mushrooms and julienned ginger. Continue to simmer gently for an additional 10 minutes to allow the mushrooms to soften and infuse their flavor into the congee.
  3. Cook chicken: Add the shredded or sliced chicken to the pot and stir well. Allow the chicken to cook thoroughly in the simmering congee for about 5 to 7 minutes, until no longer pink and fully cooked through.
  4. Season the congee: Stir in the soy sauce and sesame oil for added depth and aroma. Season with salt and white pepper to taste, adjusting based on your preference.
  5. Final simmer and serve: Let the congee simmer briefly for another 2 to 3 minutes to meld all flavors. Ladle into bowls, garnish generously with chopped green onions, and serve hot for a soothing, hearty meal.
