Description

Cinnamon Banana Bites are a quick and healthy snack made with ripe bananas, cinnamon, and coconut oil, offering a warm and sweet treat that’s perfect for any time of the day.

Ingredients

  • 2 ripe but firm bananas
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Peel the bananas and slice them into rounds, about ½ inch thick.
  2. In a small bowl, mix the granulated sugar, ground cinnamon, and a pinch of salt together. Set aside.
  3. In a non-stick skillet, heat the melted coconut oil over medium heat.
  4. Add the banana slices to the skillet in a single layer. Cook for 2-3 minutes on each side until golden brown and slightly caramelized. Be careful not to overcook them, as they can become too soft.
  5. Once the banana slices are cooked, sprinkle them with the cinnamon-sugar mixture, tossing gently to coat evenly.
  6. Serve the cinnamon banana bites immediately, either on their own or as a topping for oatmeal or yogurt.

Notes

  • Add chopped walnuts or almonds to the cinnamon-sugar mixture for a nutty crunch.
  • For a vegan version, replace granulated sugar with maple syrup for a more natural sweetness.
  • For a spicy kick, add a pinch of cayenne pepper or ground ginger to the cinnamon sugar.
