- Preheat Oven: Preheat your oven to 110°C (225°F) to ensure a low and slow drying process that will help the meringues achieve their crisp texture.
- Beat Egg Whites: Using a clean, grease-free bowl, beat the egg whites until soft peaks form, which means the peaks gently fall over when the beaters are lifted.
- Add Sugar Gradually: Slowly add the sugar a little at a time while continuing to beat the egg whites. Keep beating until stiff peaks form, meaning the peaks stand straight up and don’t fall.
- Add Vanilla: Gently fold in the vanilla extract to infuse the meringue with a subtle, sweet flavor without deflating the mixture.
- Pipe Meringue: Transfer the meringue mixture to a piping bag and pipe small mounds onto a baking sheet lined with parchment paper, spacing them evenly.
- Bake: Put the tray in the oven and bake for 60 to 75 minutes until the meringues are dry to the touch and can be easily lifted off the paper without sticking.
- Cool Completely: Remove the meringues from the oven and allow them to cool fully at room temperature to set their texture.
- Melt Chocolate: While the meringues cool, melt the chocolate chips with the optional coconut oil in a microwave or double boiler until smooth and glossy.
- Dip Meringues: Dip the bottom of each cooled meringue into the melted chocolate, coating about half of each cookie.
