Description

Chocolate Chip Cookie Brownies, also known as Brookies, combine the best of both worlds—the chewy, fudgy texture of brownies and the gooey, sweet goodness of chocolate chip cookies. With layers of soft brownie on the bottom and a golden cookie dough topping, every bite offers the perfect balance of rich chocolate and sweet cookie flavor.


Ingredients

  • 1/2 cup unsalted butter, melted (for the brownie layer)
  • 1 cup granulated sugar (for the brownie layer)
  • 2 large eggs (for the brownie layer)
  • 1 teaspoon vanilla extract (for the brownie layer)
  • 1/3 cup unsweetened cocoa powder (for the brownie layer)

  • 1 large egg (for the cookie dough layer)
  • 1 1/4 cups all-purpose flour (for the cookie dough layer)
  • 1/2 teaspoon baking soda (for the cookie dough layer)
  • 1/4 teaspoon salt (for the cookie dough layer)
  • 1 cup chocolate chips (for the cookie dough layer)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
  2. In a medium bowl, combine the melted butter and sugar for the brownie base. Stir until well combined. Add eggs and vanilla, whisk until smooth. Mix in cocoa powder, flour, salt, and baking powder. Stir until smooth, then fold in chocolate chips (optional). Pour into the prepared baking dish, spreading evenly.
  3. For the cookie dough, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Add vanilla and egg, mixing until combined. In another bowl, whisk flour, baking soda, and salt, then gradually add to the wet ingredients. Stir until combined, then fold in chocolate chips.
  4. Drop spoonfuls of the cookie dough over the brownie batter and gently spread it over the top, leaving some brownie visible underneath.
  5. Bake for 30-35 minutes, or until a toothpick comes out with moist crumbs. The cookie dough should be golden brown and set, while the brownies remain fudgy underneath. Let cool for 15-20 minutes before slicing.
