Ingredients
Chickpeas:
- 1 cup cooked chickpeas (drained and rinsed)
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
Eggs:
- 2 eggs
- 2 tablespoons olive oil
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- Heat the oil: Place a skillet over medium heat and add 2 tablespoons of olive oil. Allow it to warm up so it’s ready for sautéing.
- Cook the chickpeas: Add the drained and rinsed chickpeas to the skillet along with 1/2 teaspoon paprika, 1/2 teaspoon cumin, salt, and pepper to taste. Stir and cook the mixture until the chickpeas become slightly crispy and aromatic, usually about 5-7 minutes.
- Make space for eggs: Push the crispy chickpeas to one side of the skillet to clear space on the other side.
- Fry the eggs: Crack the two eggs into the empty side of the skillet. Cook the eggs to your preferred doneness — whether sunny side up, over easy, or over hard.
- Serve and garnish: Plate the chickpeas and top them with the fried eggs. Finish the dish by sprinkling fresh parsley or cilantro over the top for a burst of freshness.
