Description

Chicken Tagine is a classic North African dish where chicken is slow-cooked with aromatic spices, vegetables, and dried fruits in a rich, flavorful sauce. Traditionally prepared in a tagine, it offers a warm, comforting, and exotic taste.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground ginger
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1/2 cup dried apricots, halved
  • 1/4 cup green olives, pitted
  • 1 tablespoon honey
  • Fresh cilantro or parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet or tagine over medium-high heat. Brown chicken thighs on all sides, about 5 minutes per side. Remove and set aside.
  2. Add onions to the pan and sauté until soft, about 5–7 minutes. Add garlic and cook for another 1 minute.
  3. Stir in cumin, coriander, cinnamon, turmeric, ginger, salt, and pepper. Cook for 1–2 minutes until fragrant.
  4. Return chicken to the pan. Add chicken broth, dried apricots, olives, and honey. Bring to a simmer.
  5. Reduce heat to low, cover, and cook for 35–40 minutes, until chicken is tender and cooked through.
  6. Garnish with chopped cilantro or parsley and serve hot with couscous or rice.

Notes

  • For a richer flavor, marinate the chicken in spices and olive oil for 1–2 hours before cooking.
  • Other dried fruits like raisins or dates can be substituted for apricots.
  • Adjust spices to taste; add a pinch of cayenne for mild heat if desired.
