Ingredients
- 1 lb boneless, skinless chicken breasts (or thighs, cut into bite-sized pieces)
- 2 tablespoons olive oil
- 1 medium onion (diced)
- 2 cups mushrooms (sliced)
- 3 cloves garlic (minced)
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup chicken broth (low-sodium)
- 1 cup sour cream
- 1 tablespoon Dijon mustard (optional, for extra flavor)
- 1 tablespoon all-purpose flour (for thickening)
- 1 tablespoon butter
- Fresh parsley (for garnish)

Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and paprika. Cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside.
- In the same skillet, add the remaining olive oil and butter. Cook diced onion for 3-4 minutes, until softened. Add sliced mushrooms and minced garlic and cook for another 5 minutes, until mushrooms release moisture and soften.
- Sprinkle flour over vegetables and stir to coat. Cook for 1-2 minutes. Gradually add chicken broth, stirring continuously to avoid lumps. Bring to a simmer and cook for 5 minutes until the sauce thickens.
- Lower heat, stir in sour cream and Dijon mustard (if using). Season with salt and pepper to taste. Return chicken to the skillet and simmer for 5 more minutes to combine flavors.
- Serve over egg noodles, rice, or mashed potatoes. Garnish with fresh parsley and enjoy!
