Description

Chicken Stroganoff is a comforting, creamy twist on the classic beef stroganoff. Tender chicken pieces are simmered in a rich, savory sauce made with mushrooms, onions, garlic, and a touch of sour cream, served over egg noodles, rice, or mashed potatoes.


Ingredients

  • 1 lb boneless, skinless chicken breasts (or thighs, cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 2 cups mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup chicken broth (low-sodium)
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard (optional, for extra flavor)
  • 1 tablespoon all-purpose flour (for thickening)
  • 1 tablespoon butter
  • Fresh parsley (for garnish)
  • Cooked egg noodles, rice, or mashed potatoes (for serving)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and paprika. Cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside.
  2. In the same skillet, add the remaining olive oil and butter. Cook diced onion for 3-4 minutes, until softened. Add sliced mushrooms and minced garlic and cook for another 5 minutes, until mushrooms release moisture and soften.
  3. Sprinkle flour over vegetables and stir to coat. Cook for 1-2 minutes. Gradually add chicken broth, stirring continuously to avoid lumps. Bring to a simmer and cook for 5 minutes until the sauce thickens.
  4. Lower heat, stir in sour cream and Dijon mustard (if using). Season with salt and pepper to taste. Return chicken to the skillet and simmer for 5 more minutes to combine flavors.
  5. Serve over egg noodles, rice, or mashed potatoes. Garnish with fresh parsley and enjoy!
