Ingredients

  • 1 1/2 lbs boneless, skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lime juice (freshly squeezed)
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 8 small corn or flour tortillas (soft tacos)
  • 1/2 cup finely chopped white onion
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges (for serving)
  • Salsa or hot sauce (optional, for extra flavor)
  • Radishes or avocado (optional, for extra toppings)

Instructions

  1. In a small bowl, mix together the olive oil, chili powder, cumin, garlic powder, paprika, onion powder, salt, pepper, lime juice, and minced garlic to make the marinade.
  2. Place the chicken thighs (or breasts) in a resealable plastic bag or shallow dish, pour the marinade over the chicken, toss to coat, and refrigerate for at least 30 minutes or up to 2 hours.
  3. Grill method: Preheat your grill to medium-high heat. Grill the chicken for 5-7 minutes per side until the internal temperature reaches 165°F (74°C). Let it rest before slicing.
  4. Skillet method: Heat a large skillet over medium heat. Add a small amount of oil and cook the marinated chicken for 5-7 minutes per side, until golden brown and fully cooked. Let it rest before slicing.
  5. While the chicken is cooking, warm the tortillas on the stove or microwave until soft and pliable.
  6. Once the chicken has rested, slice it into thin strips or bite-sized pieces. Divide the chicken evenly between the tortillas.
  7. Top each taco with chopped onions, cilantro, a squeeze of lime juice, and any optional toppings like salsa, avocado, or radishes.
  8. Serve immediately while the chicken is warm and enjoy with your favorite side dishes or drinks!

Notes

  • For a spicy kick, add more chili powder or a chopped jalapeño to the marinade.
  • If you don’t have a grill, you can also cook the chicken in a pan on the stovetop.
