Ingredients
Protein
- 2 cups cooked sliced chicken breast
Noodles
- 1 package shirataki noodles, drained and rinsed very well
Vegetables
- 1 cup broccoli florets
- 1 bell pepper, sliced
- 1 carrot, julienned
Sauce & Seasonings
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 1 teaspoon garlic, minced
Instructions
- Heat the oil: Warm 1 tablespoon of sesame oil in a wok or large skillet over medium-high heat to prepare for stir frying.
- Cook the aromatics and chicken: Add the cooked sliced chicken breast, minced garlic, and grated ginger to the hot oil. Stir fry for about 2 minutes until fragrant and the chicken is heated through.
- Add the vegetables: Toss in broccoli florets, sliced bell pepper, and julienned carrot. Continue stir frying for 4 to 5 minutes, stirring frequently until the vegetables are tender-crisp.
- Combine noodles and sauce: Add the drained and rinsed shirataki noodles, soy sauce, and rice vinegar to the wok. Stir fry everything together until heated through and evenly coated with the sauce, about 2 minutes.
- Serve immediately: Remove from heat and serve the stir fry hot for the best texture and flavor.
Notes
- For extra heat, add chili paste or red pepper flakes while cooking.
- Be sure to drain and rinse shirataki noodles thoroughly to remove excess moisture and improve texture.
- You can substitute the vegetables with your choice of stir-fry-friendly veggies like snap peas, mushrooms, or baby corn.
- Use low-sodium soy sauce to reduce salt content if desired.
