Ingredients
- 12 oz spaghetti
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup unsalted butter (1 stick)
- Zest and juice of 1 lemon
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 ball burrata cheese (about 4 oz)
- Fresh parsley, chopped, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and cook for 5–7 minutes until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 1–2 minutes until fragrant.
- Stir in lemon zest, lemon juice, and chicken broth. Simmer for 2–3 minutes.
- Add cooked spaghetti and chicken back into the skillet. Toss to coat in the sauce. Add a splash of reserved pasta water if the mixture is dry. Stir in Parmesan cheese.
- Transfer pasta to serving plates. Tear burrata cheese over the top and garnish with chopped parsley. Serve immediately.
