Description
Silky-smooth chicken liver pâté enriched with cream, cognac, and truffle oil — decadent, spreadable luxury.
Ingredients
1 lb chicken livers, cleaned
- ½ cup butter, divided
- 1 shallot, minced
- 1 Tbsp cognac or brandy
- ¼ cup heavy cream
- 1 tsp truffle oil
- Salt & pepper
Instructions
- Sauté shallot in 2 Tbsp butter until soft. Add livers; cook 4–5 min until just pink inside.
- Deglaze with cognac; cool slightly.
- Blend with remaining butter, cream, truffle oil, salt & pepper until smooth.
- Chill 2 hrs before serving.

- Serve with crostini and cornichons.
