Instructions
- Rinse the rice: Rinse 1 cup of jasmine rice under cold running water until the water runs clear to remove excess starch and ensure a smooth congee texture.
- Combine ingredients in pot: Add the rinsed rice, 8 cups of chicken broth, 1 lb of chicken thighs or breast, and 2 tablespoons of sliced fresh ginger into a large pot.
- Simmer the congee: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer uncovered for 1 to 1½ hours. Stir occasionally to prevent sticking and to help the rice break down into a creamy porridge consistency.
- Shred the chicken: Remove the chicken pieces from the pot and shred them finely using forks or your hands. Return the shredded chicken back to the pot and stir well.
- Season and serve: Taste and season the congee with salt as desired. Serve hot, garnished with sliced green onions and optionally drizzled with sesame oil or soy sauce for added flavor.
