  • 8 cups chicken broth
  • 1 lb chicken thighs or breast
  • 2 tbsp fresh ginger, sliced

Instructions

  1. Rinse the rice: Rinse 1 cup of jasmine rice under cold running water until the water runs clear to remove excess starch and ensure a smooth congee texture.
  2. Combine ingredients in pot: Add the rinsed rice, 8 cups of chicken broth, 1 lb of chicken thighs or breast, and 2 tablespoons of sliced fresh ginger into a large pot.
  3. Simmer the congee: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer uncovered for 1 to 1½ hours. Stir occasionally to prevent sticking and to help the rice break down into a creamy porridge consistency.
  4. Shred the chicken: Remove the chicken pieces from the pot and shred them finely using forks or your hands. Return the shredded chicken back to the pot and stir well.
  5. Season and serve: Taste and season the congee with salt as desired. Serve hot, garnished with sliced green onions and optionally drizzled with sesame oil or soy sauce for added flavor.
