Ingredients

Protein

Vegetables

  • 1 acorn squash, sliced
  • 1 onion, sliced

Seasonings & Oils

  • 2 tbsp olive oil
  • 1 tsp poultry seasoning
  • 1 tsp rosemary
  • Salt and pepper, to taste
  • 1 tbsp maple syrup (optional)


Instructions

  1. Prepare Vegetables: Toss the sliced acorn squash and onion with olive oil, maple syrup (if using), poultry seasoning, rosemary, salt, and pepper until well coated to ensure the vegetables absorb all the flavors.
  2. Arrange on Sheet Pan: Place the seasoned chicken thighs or breasts on a sheet pan alongside the coated squash and onions, spreading everything evenly for consistent roasting.
  3. Roast: Preheat the oven to 400°F (200°C) and roast the chicken and vegetables for 35–45 minutes, or until the chicken is fully cooked through (internal temperature of 165°F) and the squash is tender and caramelized.
  4. Garnish and Serve: Remove from oven, let rest briefly, then garnish if desired and serve warm for a comforting meal.
