Description
A homemade version of the Chick-fil-A Kale Crunch Side! This light and refreshing salad combines tender kale, crisp green cabbage, roasted almonds, and a tangy apple cider Dijon vinaigrette. Perfect as a side dish or healthy lunch.
Ingredients
For the Salad:
- 4 cups curly kale, stems removed and chopped
- 2 cups green cabbage, thinly sliced
- ½ cup roasted salted almonds (slivered or sliced)
For the Dressing (Apple Cider Dijon Vinaigrette):
- ¼ cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp maple syrup or honey
- ½ tsp garlic powder
- Salt and black pepper, to taste
Instructions
- In a large bowl, add chopped kale and a drizzle of olive oil with a pinch of salt. Massage kale with your hands for 2–3 minutes until softened and slightly darker.
- Add cabbage to the bowl and toss together.
- In a small jar or bowl, whisk olive oil, apple cider vinegar, Dijon, maple syrup, garlic powder, salt, and pepper until smooth.
- Pour dressing over salad and toss to coat evenly.
- Top with roasted almonds before serving.
Notes
- For extra crunch, add thinly sliced apples or carrots.
- Store leftovers in an airtight container in the fridge for up to 2 days (dressing keeps up to 1 week).
- Double the dressing recipe to keep extra on hand—it’s great for other salads!
