Description

A homemade version of the Chick-fil-A Kale Crunch Side! This light and refreshing salad combines tender kale, crisp green cabbage, roasted almonds, and a tangy apple cider Dijon vinaigrette. Perfect as a side dish or healthy lunch.


Ingredients

For the Salad:

  • 4 cups curly kale, stems removed and chopped
  • 2 cups green cabbage, thinly sliced
  • ½ cup roasted salted almonds (slivered or sliced)

For the Dressing (Apple Cider Dijon Vinaigrette):

  • ¼ cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup or honey
  • ½ tsp garlic powder
  • Salt and black pepper, to taste


Instructions

  1. In a large bowl, add chopped kale and a drizzle of olive oil with a pinch of salt. Massage kale with your hands for 2–3 minutes until softened and slightly darker.
  2. Add cabbage to the bowl and toss together.
  3. In a small jar or bowl, whisk olive oil, apple cider vinegar, Dijon, maple syrup, garlic powder, salt, and pepper until smooth.
  4. Pour dressing over salad and toss to coat evenly.
  5. Top with roasted almonds before serving.

Notes

  • For extra crunch, add thinly sliced apples or carrots.
  • Store leftovers in an airtight container in the fridge for up to 2 days (dressing keeps up to 1 week).
