Description

Chewy Pumpkin Cookies are a fall favorite, featuring soft, fluffy texture with the cozy flavors of pumpkin and warm spices. Perfect for a snack, dessert, or holiday treat!


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup pumpkin puree (canned or fresh)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup chocolate chips or white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  6. Fold in the chocolate chips if using.
  7. Use a tablespoon or cookie scoop to drop dough onto the prepared baking sheet. Space the cookies about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are slightly golden and a toothpick inserted into the center comes out clean.
  9. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. Enjoy!
