Description

Cheesy Taco Biscuit Bake combines seasoned ground beef, bell peppers, onions, and a creamy sauce, topped with biscuit dough and melted cheddar cheese for a hearty, comforting dish.


Ingredients

  • 1.5 pounds lean ground beef
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2 ½ cups biscuit mix (like Bisquick)
  • 1 cup water
  • Cooking spray (like Pam)
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1 ½ cups cheddar cheese, fiesta blend, shredded (divided)
  • 1 teaspoon garlic powder
  • ½ cup salsa (mild)

Instructions

  1. Preheat your oven to 350°F. Spray a 9×13-inch baking dish with cooking spray.
  2. In a large skillet over medium heat, cook the ground beef until browned and crumbled, about 6-8 minutes. Drain excess grease, if necessary.
  3. Add the chopped red bell pepper and onion to the skillet with the beef and cook for an additional 3-4 minutes, until the vegetables are softened. Stir in the taco seasoning mix and cook for another minute. Remove from heat.
  4. In a medium bowl, combine the biscuit mix, water, and garlic powder. Stir until just combined.
  5. Spread the beef and vegetable mixture evenly in the prepared baking dish. In a small bowl, mix the sour cream, mayonnaise, and diced green chiles. Spread this creamy mixture over the beef and vegetables in the baking dish.
  6. Drop spoonfuls of the biscuit dough on top of the creamy beef mixture. Sprinkle the shredded cheddar cheese evenly over the top of the biscuit dough.
  7. Place the dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
  8. Let the dish cool for a few minutes before serving. Serve with salsa on the side for added flavor.
