Cheesy Taco Biscuit Bake combines seasoned ground beef, bell peppers, onions, and a creamy sauce, topped with biscuit dough and melted cheddar cheese for a hearty, comforting dish.
Ingredients
- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2 ½ cups biscuit mix (like Bisquick)
- 1 cup water
- Cooking spray (like Pam)
- ½ cup sour cream
- ½ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1 ½ cups cheddar cheese, fiesta blend, shredded (divided)
- 1 teaspoon garlic powder
- ½ cup salsa (mild)
Instructions
- Preheat your oven to 350°F. Spray a 9×13-inch baking dish with cooking spray.
- In a large skillet over medium heat, cook the ground beef until browned and crumbled, about 6-8 minutes. Drain excess grease, if necessary.
- Add the chopped red bell pepper and onion to the skillet with the beef and cook for an additional 3-4 minutes, until the vegetables are softened. Stir in the taco seasoning mix and cook for another minute. Remove from heat.
- In a medium bowl, combine the biscuit mix, water, and garlic powder. Stir until just combined.
- Spread the beef and vegetable mixture evenly in the prepared baking dish. In a small bowl, mix the sour cream, mayonnaise, and diced green chiles. Spread this creamy mixture over the beef and vegetables in the baking dish.
- Drop spoonfuls of the biscuit dough on top of the creamy beef mixture. Sprinkle the shredded cheddar cheese evenly over the top of the biscuit dough.
- Place the dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
- Let the dish cool for a few minutes before serving. Serve with salsa on the side for added flavor.
