Ingredients

Chicken

Filling

  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella or provolone cheese
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and lightly grease a baking dish to prepare for baking the chicken breasts.
  2. Prepare Chicken Pockets: Slice a pocket into the side of each chicken breast carefully, ensuring not to cut all the way through to hold the stuffing.
  3. Make Filling: In a mixing bowl, combine the softened cream cheese, shredded mozzarella or provolone, chopped spinach, minced garlic, and Italian seasoning, stirring until well mixed.
  4. Stuff Chicken: Evenly fill each chicken breast pocket with the prepared filling. If necessary, secure the pocket with toothpicks to keep the stuffing inside.
  5. Season Chicken: Season the outside of each stuffed chicken breast with salt, black pepper, and paprika for enhanced flavor.
  6. Sear Chicken: Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 2 to 3 minutes on each side until they develop a light golden brown crust.
  7. Bake Chicken: Transfer the seared chicken breasts into the greased baking dish and bake in the preheated oven for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) ensuring thorough cooking.
