Ingredients
- For the Katsu:
- 1 pound smoked sausage (halal-certified, no pork)
- 4 cups baby potatoes, halved or quartered

- 1 teaspoon onion powder
- 1/2 teaspoon black pepper

Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and grease a large baking dish or line a baking sheet with parchment paper.
- Prepare the potatoes: Wash and halve or quarter the baby potatoes. In a large mixing bowl, toss the potatoes with olive oil, garlic powder, onion powder, black pepper, and the ranch seasoning mix until evenly coated.
- Prepare the sausage: Slice the smoked sausage into bite-sized pieces. Add the sausage to the mixing bowl with the seasoned potatoes and toss to combine.
- Bake: Transfer the potato and sausage mixture to the prepared baking dish. Spread it out into an even layer. Bake for 25-30 minutes, or until the potatoes are tender and lightly golden, and the sausage is heated through.
- Add cheese: After the baking time, remove the dish from the oven and sprinkle the shredded cheddar cheese (or your choice of cheese) evenly over the top. Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Serve: Once the cheese is melted, remove the dish from the oven. If desired, serve with a dollop of sour cream on top and sprinkle with fresh chopped parsley for garnish. Enjoy!
